乳析，又稱分層，是乳劑在放置過程中，分散相液滴會逐漸集中在頂部和底部，這種現象稱為乳析或分層。 其產生原因是由於體系中的分散相和連續相的密度不同，分散相小液滴在體系中運動，因油的密度小於水，故O/W型乳劑會出現分散相下沉的現象。 兩相密度差越大，液滴半徑越大，外相粘度越小，分層速度就越快。 防止乳析：一、可以減小分散相粒徑，根據Stokes定律，可知分散相液滴半徑縮小一半，分層速度就可以減小4倍；其二，可以增加連續相得粘度，連續相黏度的增大，使分散相液滴的運動速度減小，也減小了連續相相互碰撞的機會。
